Thank you for bearing with us so far this year. We have non-gmo & organic cartons available.  Wholeheartedly, Al Stone & the VRFH Team Producer Highlight: New Roots Farm New Roots Farm in Canon City is a small family farm located on five acres. Drawing on the Arkansas River for irrigation water, we produce a diverse variety of predominantly heirloom vegetables for sale through a CSA program, farmers markets, and wholesale.  Our farming philosophy is based on the idea that a strong connection to the land is the foundation for healthy communities and cultures. We believe the act of growing and sharing good food is integral to strengthening connections between people with each other and with place. We recognize the farm as an ecosystem, and our ever-evolving farming practices are centered on regenerative agriculture concepts such as building soil health and fertility and increasing biodiversity.  Though not certified organic, we do not use any synthetic pesticides or fertilizers, instead relying on natural pest control methods and a combination of minimum tillage, cover crops, crop rotation, compost and manure application, and managed grazing of goats, chickens, and guinea hens to generate soil fertility.  At New Roots Farm, our passion is to feed our community in a way that restores and regenerates people and land.  Scallions/Green Onions Chives Product Highlights: Watermelon Radish Colorado Fresh Farms Monte Vista, CO Eggs Non-GMO & Certified Organic  Yoder Family Farms Monte Vista, CO Quinoa Cake 8 inch round or sliced Root Food Mosca, CO Mountain Girl Pickles Boulder, CO Restocks: Rocking W Cheese Fresh Box 2025: Recipe Corner: Watermelon Radish and Purple Daikon Salad Adapted from Give it Some Thyme Ingredients *local option available Dressing medium orange , zest and juice ¼ cup apple cider vinegar 2 tablespoons apple cider 1 tablespoon maple syrup or honey 1 teaspoon Dijon or Creole mustard ¼ cup extra-virgin olive oil Kosher salt and black pepper Freshly ground nutmeg, to taste Salad ½ pound watermelon and purple radishes , cut into 1/16 – inch slices ¼ cup feta cheese , crumbled ¼ cup toasted walnuts , chopped 2 tablespoons shallots , minced 2 tablespoons pomegranate arils 1 tablespoon fresh herbs (chives, parsley, or thyme), finely chopped Dressing Place the first 6 ingredients in a mason jar. Cover tightly with lid and shake vigorously until well combined. Season to taste with salt and pepper, and freshly grated nutmeg. Vinaigrette will last up to 1 week in the refrigerator. Let sit at room temperature 15 minutes before using. Salad Place radish slices in a large bowl and pour in enough vinaigrette to coat without soaking. Gently toss. Let marinate 10-15 minutes. Set aside. Reserve remaining dressing for when serving or another use. Meanwhile, toast the walnuts if they’re not already, and prep the remaining ingredients. After radishes marinate, arrange them on a platter. Sprinkle the feta, walnuts, shallots, pomegranate arils, and fresh herbs over the radish slices. Garnish with extra parsley, if desired.
