What an empowering space for connection, perspective sharing, & gratitude for our lcoal food system at the Regional Convening in Saguache, tour at Laz Ewe, and hors d'oeurves & cocktails at The Windsor Hotel in Del Norte last Friday. Thirty representatives from the SLV, Chaffee County, and Gunnison discussed a vision for our region's food system. Dressing: add all the ingredients to a mason jar, starting with 3 tablespoons of water. Shake hard until everything is combined. If too thick, add more water 1 tablespoon at a time, until you reach the desired consistency.
Pour the dressing over the salad and toss to combine. Serve immediately.
Rinse 4 Bok Choi Leaves. Cook Gosar Sausages over the grill, or bake in the oven until cooked through. Use Bok Choi leaves as the "bun" and add desired condiments (we recommend spicy mustard!).
